Malt

Malting is when you take some barley, get it wet to start germinating (it’ll start to sprout), then dry it to stop it from germinating any more. This effectively gets the barley to produce sugars for the plant, but when you dry it, it stops germinating and the resulting sugar (maltose) stays in tact.

Maltose is a sugar; yeast love it.
